Freeze a mixture of coconut paste with your favourite spice blends to create meltable cubes full of flavour. Spice melts are tasty timesavers, perfect for adding to soups, stews, hot chocolate, tea (instantly creating a creamy chai), blending into smoothies or simply enjoyed as an alternative to chocolate.
Coconut Curry Melts are my favourite incarnation.
Ingredients: 1 cup of coconut paste and 2 teaspoons of mild curry powder.
Directions: warm the coconut paste in hot water, remove once softened then blend with spices. Spoon the mixture into an ice-tray and freeze overnight (6-8 hours).
It’s a simple recipe that adds spice to the season.
