Key Ingredients
Camu Camu contains bioflavonoids, the amino acids serine, valine, and leucine, plus considerable quantities of thiamine, riboflavin and niacin. It has been used by ancient cultures to help promote healthy gums, eyes, and skin and also support the functions of the brain (nervous system) and heart (circulatory system).
Acai is rich in anthocyanin (a type of antioxidant), which helps reduce cholesterol levels in the body. It also has anti-inflammatory properties, which help with soothing inflammations caused by allergic reactions.
Recipe: Amazonian Fruit Chutney
Ingredients: Makes 4 cups (2 pints)
4 cups plums (stoned and quartered)
1 red onion (finely chopped)
1/4 cup apple cider vinegar
1/2 teaspoon Camu Camu powder
2 teaspoons Acai powder
2 teaspoons ginger (finely grated)
1 teaspoon chilli flakes (optional)
1 teaspoon cinnamon
1 pinch sea salt
Method: Place all the ingredients except the Camu Camu, Acai and salt, into a large pot or saucepan over a medium heat. Bring to a boil, cover and simmer for 8-10 minutes (until plums are tender). Add the remaining ingredients, stir for a further 5-10 minutes reducing the mixture to a thick sauce. Remove from the heat and allow to stand until completely cool. Pour into sterilised jars, and store in the fridge. Can be served right away, but is best matured for two weeks.
