Before you hasten to question “how pasta could be primal?”… allow me to clarify – this recipe is a twist on the traditional, replacing grain-based pasta with a humble garden vegetable. The preparation is minimal and with no cooking time this is one fast meal sure to satisfy those passionate for pasta.
Zucchini Fettuccine
Serves: Two, Prep Time: Under 10 minutes
Ingredients
1 zucchini
1 tbsp tahini
2 cloves of garlic
Juice from half a lemon
Herbs of choice (oregano, thyme, basil – all work well)
Instructions
Wash and peel strips of fresh zucchini into a bowl. In a separate bowl, add the juice of half a lemon, crushed garlic and tahini – then mix with a whisk, fork or better electric blender (this creates the smoothest dressing). Pour the wet ingredients over your pasta, toss and divide into equal serves then top with herbs of your choosing.
So there you have it, Primal Pasta!
