Pop-eye gets the Primal approval with this no-grain, tasty, ten minute snack loaded with iron, protein, fibre and green goodness.
Frozen spinach is one of the most adaptable food staples to have on hand for when hunger strikes and this recipe is a great example of this:
Ingredients
1 box of frozen spinach
2 egg whites
1 tablespoon flaxmeal
1 teaspoon onion powder
1 teaspoon parmesan shreds
Instructions
Defrost spinach (2 minutes in the microwave)
Place wet spinach in muslin cloth (you can also use a tea towel) and twist until you remove the majority of moisture.
Add the dry spinach, egg whites, flaxmeal and onion powder in a bowl and beat together using a hand held blender (alternatively, stir vigorously with a spoon).
Drop the wet (not runny) mix in the centre of a pizza tray and flatten outwards with your fingers making sure to smooth in any holes and even out the surface.
Finally sprinkle the parmesan shreds on top and bake on high for ten minutes.
Devour with delight!
