Easter without the soft satisfaction of a hot cross bun covered in butter, hardly seems worth it! Yet those who prefer the primal lifestyle and reflective diet would disagree. Still, comfort food representing long held traditions need not be abandoned entirely especially when a little innovation and primal approved ingredients can create a worthy counterfeit.
Bedrock Buns are visually devolved from modern hot cross buns but the flavour and indulging celebration won’t disappoint.
Primal Approved Bedrock Bun Recipe
1/2 cup coconut flour
1 tsp baking powder
1/2 cup organic full fat butter, room temp
1/2 cup maple syrup
1 tsp cinnamon
1/2 cup raisins
2 large free range organic eggs
1 tsp vanilla extract
Set oven to 350 degrees. Mix flour, cinnamon and baking powder in a bowl. Using a fork, cut butter into flour mixture until it resembles small peas. Add coconut and raisins and mix well. Beat 2 eggs with maple syrup and vanilla extract. Make a well in the center of the flour mixture and pour in eggs. Mix slowly to form a ball of dough. Separate into 8 or 9 even pieces and drop onto a greased pan. Bake at 350 degrees for 25 mins. Remove from oven and cool.
